To achieve this high quality, grass is sown between the vines and as from the month of July the leaves overlapping the grapes are removed to let the sun get at them. The grapes are harvested MANUALLY and the sorting of the grapes is done in the vines in a very strict way. After a cold decanting process, the fermentation is traditionally done using controlled temperatures, half in new oak barrels and half in one year old barrels.

The bottling is exclusively done at the DOMAINE.  

The CHAMPS GAINS at about 330 meters, is fairly high in altitude, well situated above the locality of MONT-RACHET. It is one of the most famous “climats” of the Puligny region.

GRAPE VARIETY : Exclusively 30 year old CHARDONNAY vines.

 SURFACE AREA: 0.45 Hectares

 PRODUCTION :  2400 bottles per year.

 TERROIR : Very stony clay-limestone soil.

 

A pale green wine with aromas of citronella, kiwi fruit and a hint of vanilla. Noble, full-bodied, structured, long on the palate with a touch of wood. The dominant taste of this wine is finesse and mineral.

PULIGNY-MONTRACHET LES CHAMPS GAINS is ideal served with flambéed king prawns, scallops, and poached fillets of sole with a cream sauce or a grilled salmon steak.
