BOURGOGNE CHARDONNAY

The BOURGOGNE CHARDONNAY wine is produced on a clay-limestone soil in the villages of Santenay and Chassagne-Montrachet. 

 GRAPE VARIETY : Exclusively 15 year old CHARDONNAY vines.  

 SURFACE AREA : 0.78 Hectares

PRODUCTION :  3000 bottles per year.

TERROIR : Quite rich CLAY-LIMESTONE soil.

 Grass is sown between the vines to naturally regulate the yield and encourage the microbial life in the soil without adding any chemicals.

 The alcohol fermentation lasts for about 15 days, using controlled temperatures, half in 2 to 3 year old oak barrels and half in vats. The lees are stirred weekly in the barrel during the ageing period lasting for about 9 months.  

The clarification and the clearness are obtained by using a well-known ancestral fining process.

 

 The wine has green flashes with a light straw colour and has a buttery nose with hints of toasted bread quince and jasmine.

On the palate, it is round meaty and light and its touch of wood goes well with the fat of the wine. 

BOURGOGNE CHARDONNAY wine should be served at a temperature of around 12°.

 BOURGOGNE CHARDONNAY is ideal served with smoked hams and terrines when it is still young and then with white meats once it has reached maturity.
